“Easy Like Sunday Morning”…..Pancake Recipe

From Scratch, To Delicious

Our favorite way to wake up on Sunday Mornings is with the scent of pancakes wafting throughout the house. The Kids are instantly excited to gather into the kitchen and to the table, waiting for breakfast to finish. They will typically grab their Tablet, A Coloring Book, or favorite car and impatiently wait. Getting my kids to hold off from snacking, while I finish preparing their meal is insane. It’s like asking the ocean not to make waves! And we ALL know that is not going to happen. But let’s be honest, could you wait to dive into sticky maple syrup or fresh berries?!? 

          Fluffy on the inside and melt-in-your-mouth delicious, pancakes in our house is equal to water and milk! I  found this recipe while searching Pinterest for easy prep meals for the week. I tried this recipe before and somehow, I screwed it up. So, being a momma who thrives on, “I know, I can do it”, decided to give it another whirl. I went all in, forgetting about the Dishes that would follow, and the flour I would have to sweep, from my assistances. While still in my favorite pair of slippers, I asked “Alexa” to play our favorite morning jams. A Weekend playlist, that will start the day off right or at least while we attempt these pancakes. 

Here is the simple recipe that we used:

Ingredients

3 large eggs

½ cup all-purpose flour

1 ¼ tsp baking powder

Pinch of salt

½ tsp vanilla extract

½ cup buttermilk 

1 tsp honey (or maple syrup)

Pinch of cinnamon

Directions

1. Medium Heat a large, non-stick pan.

2. Separate the egg whites into one bowl, and the yolks in another bowl. You’ll eventually use both. (Soooo, Jenkins party of SIX, just cracked the entire egg into the bowl)

3. Combine flour, baking powder, cinnamon, and salt.

4. Add buttermilk, vanilla, and flour to the bowl with the egg yolks. Whisk until blended.(Again, Jenkins Party Of SIX, already blended the ingredients, into one large bowl.!)

5. Slowly add your dry ingredients into the egg yolk mixture and mix. (DONE!!,Jenkins style.)

6.Whip egg whites, until smooth, and easily able to fold and pour out of bowl. This is the key to fluffy pancakes.

7. Scoop ¼ cup of batter into your heated pan and allow for the bottom to brown. When you see bubbles rising on your pancakes you’ll know it’s time to flip. Turn them over and allow the other side to turn golden brown and delicious.

8. Serve with your favorite toppings.

I am happy to report, that these pancakes turned out great, this time. The kids enjoyed their favorite toppings of whipped cream and berries, while aggressively pouring the syrup. 

Point of this Story is not giving up and enjoying the moments. Although, we certainly had some egg shells between the fluffiness, everyone was happy. I forgot about the mountain of dishes that was to follow and the floor that NOW needed mopping. Jenkins Party Of SIX, enjoyed and danced the morning away to delicious pancakes. Together.

Warmers days, oh how I miss you. Please hurry and come our way! It’s hard being stuck in the house all day without getting outside for some masked fresh air and sunshine. These cold, icy, snow and grey days has really messed with “I’m a great MOMMA” to “MOMMA needs a time out”.

I’ve ALWAYS wanted to be a WFHM! I wanted to run the business, the house, decorate, bake, have the kids in perfect coordinating outfits and play(momma)dates. I wanted to be able to put my child into swimming lessons on a Wednesday, at noon. Be the first momma in the pick up line, while in my perfect mom lounge outfit that only took me “5 minutes” to throw together. Humhmm, Editors please! I’m lucky if somedays I get to put on Chapstick (joke, between Shaun and I). If the kids even have on matching socks and if we can make it to soccer practice by 4pm, on time. Please, don’t get me wrong I LOVE being a momma, but being on momma duty all day, with out a break is CHAOTIC!  It’s like I go to sleep being bossed around and wake up with the same job responsibilities.

So, let’s EDIT our way into Spring Vibes, outdoor play and constant sunshine! EDITORS, Now that I’m done with my Timeout, let’s go put CocoMelon into Timeout!

Fiverr is a great place to make money from home.  If you’ve never heard of it, it’s an online market place where anyone can sign up and sell and buy services, known as ‘Gigs’ from $5 upwards. Trust me, there will be a Gig that you can sell on Fiverr to make money.

DON’T PANIC if you can’t do any of these. This is just a tiny example. There are many many more Gigs created and sold regularly.  To get an idea, browse around and take a look at the type of products and services people are selling.  Some are just plain crazy and some are so simple, anybody can do them.

Plan Your Gig

To get started, you need to plan your Gig. The key here is to let your imagination run a little wild and see what you can come up with.  Make a list of skills that you have or ideas you could use and run some searches on Fiverr to see who else is doing something similar, how much they charge, how many reviews they have etc.  This will give you an idea whether there is a market for your product or service.

Don’t worry if somebody else is already selling the service you want to sell, that’s a good sign that there’s a market for it.  You just need to make sure you stand out from the crowd.

Think about what you are good at or what you are interested in.  If you feel you have no skill, then learn one.  There are so many Youtube tutorials available these days that will teach you a skill in no time.  That being said, many of the Gigs on Fiverr  don’t require much skill at all so it really is open to everybody.

Once you’ve taken a look around Fiverr, familiarized yourself with the Platform and set up your free ad, it’s time to get started.

At this point, if you are still unsure of where to start, you can learn from someone who is already making big money on Fiverr.  This is something I always do, learn from someone who is already doing it!

Create Your Gig

Once you have decided on what you want to sell then it’s time to create your Gig.  Keep your title short but punchy and carefully choose your words for your Gig title.  Here are some good examples of the type of title you should think about:

  • I will create 3 amazing Pinterest graphics for you in 24 hours.
  • I will create a professional CV to help you land your dream job.
  • I will create a stunning line illustration.
  • I will create the perfect instruction manual for your product.

Create Your Gig Image

If you take a look through the Gigs on Fiverr you’ll see that some images stand out better than others.  Use these to inspire you to create your own image.

Either way, you need to make sure that it looks professional – this will be your shop window!

Your Gig Description

Again take a look at other descriptions to see the type of things that people write.  This is an important part of your Gig and you want to get it right so don’t rush it.  Your description is what will help somebody decide whether to spend money with you or choose somebody else to do the job.

Sell yourself!  Write a confident description that makes the customer feel that they can trust you to do a great job in the time specified.

Imagine that you are the customer and ask yourself the question, would you buy from you?

Tags

Once you’ve written your description, fill in your tags to ensure that your Gig will come up in the Fiverr results when somebody searches for those keywords.  If you are unsure what tags to use, type in some keywords in the search bar and see what Gigs appear.  This will give you an idea of whether your keyword description is correct.

Delivery Duration

Next set your delivery duration.  This is the time you promise to deliver your service in. Make sure you can deliver confidently on time.

Getting Orders

Once you have set up your Gig you are ready to start taking orders.  However, don’t expect the orders to just roll in, you may need to do a little more work.

Here are a few ways you can increase your chances of getting your first orders.

  • Set up more than one Gig.
  • Promote your Gigs on social media.
  • Get some friends or family to order gigs from you and leave you great reviews.
  • Create a lower price Gig for services to help land your first Gig. Then increase your services after you are confident with your turnaround.
  • Use Buyer Request (This is essentially the tool that helps you to find buyers who are looking for the Gigs you are offering.  You can then send them an offer).  This is one of the best ways to get your first orders on Fiverr!

Getting Paid

Getting paid is really easy.  When somebody places an order with you they pay Fiverr, then when you complete the order, Fiverr pays you 80%.

So that’s how you can start making money on Fiverr.  Once you get going, how much money you make is really up to you and the effort you put into it.  It’s a simple business system that anyone can have a go at for free so why not give it a try!

The Best Sustainable Alternatives You Can Do Now

I enjoy living as sustainable as I can. My motto is “It’s better with a lot of little steps, then one big step” because while I try my best, I’m no where near perfect. The last few years I’ve tried finding the best alternatives to the products I grew up with and continued using into adulthood. You know: paper towels, paper plates, plastic wrap, plastic sandwich bags, foil, straws and other disposable items.

Below you will find the list of things that “Jenkins Party of Six” decided to switch.

They were one of those things that I knew would be hard to part with. I mean, I have chaos running throughout my house at all times. Between needing to clean up spilled milk, juice or any type of liquid that one can imagine, including the golden shower. I knew paper towels would be the last to go. But, I gave it whirl and I am still whirling it out! I came across Seventh generation paper towels and hit the jackpot. They are natural unbleached paper towels that we have used for a few months now and love. Yes, I know we could completely go the terry towel route, but again it’s the little steps.

It’s just something that is supposed to be in your pantry, right? Well, thats what I thought …Nope, wrong. I searched high and low for a good alternative that came from a company that was ethical and I was happy to find Bee’s wrap. It’s made of organic cotton with beeswax, organic jojoba oil, and tree resin in Vermont. They’re relatively easy to wash. Just use cold water, dish soap and hang to dry. We have them in various sizes ranging from small, medium, large, sandwich and the bread size to wrap up baked bread. The great thing is that they last up to a year and are compostable when they’re unable to be used any longer.

We did the math and we used approximately 60 plastic bags per month minimum. Just from packing lunch and snacks and food storage. Thats a ton of plastic being thrown out. I didn’t have to search very hard for this alternative because when I read reviews nothing compared to the Stasher bags. I bought three just to see if they were worth the hype and I was HOOKED. They’re incredible and we have a total of eight or so now. You can dish wash, microwave, put them in the oven, and on the stovetop in a pot, use them for years. Nothing else that I could find even compared. They have a wide range of sizes and colors and they’re made of silicone vs plastic. We’ve had ours for almost a year now so that means we’ve saved at least 720 Ziploc bags from ending up in the landfill.

This one was the one of the easiest for me to switch out. The hardest thing to remember is to take it with you! We use Simple Modern , which I really enjoy. They come in a variety of colors and sizes to meet, many of your needs. I get ours from Dick’s sporting goods, but I’m certain you can find them at any sporting store or Amazon.

Remembering to bring my reusable bags was the hardest part of making this switch but, when you have bags that preform fantastically they’re easy to remember. I can’t say enough good things about BAGGU bags because they’re simply incredible. You can fold these bags down into their little pouches, which comes in a wide range of patterns and sizes.They hold up to 50 pounds, which means I can stuff my toddler into one, if need be! (This is a full disclaimer, stating that I have absolutely NOT stuffed any of my toddlers in any bag.!). They also come in a variety of sizes and they are all machine washable.

My thoughts were similar to the paper towels – time consuming and messy to switch out. Surprisingly it wasn’t! I purchased the reusable coffee filters from GoldTone and they have worked incredibly for me. When the coffee is done, I dump the coffee grounds, give it a rinse and then throw them in the bin with the reusable cloths so they can all get washed together. We also use a Cafe Du Chateau French press that I love, and is super easy to clean.

I know it’s more things that could be added to our list, but again little steps. These little steps, made by my family will make huge impacts. At the end of the day, do what is best for your family and what makes you ALL thrive.

You will display epic patience with all age groups and awareness of self. You will be a gentle voice to all ages, while being screamed at. Mainly for doing what was asked. You should exhibit strong leadership skills with a forgiving mind. Because every soul is innocent with feelings that are hard to express. The ideal candidate is enjoyable to be around and is always motivated to meet the needs and expectations of their client. The ideal candidate will except nothing less for their client and to be there for them in the most trying times.

Responsibilities:

  • Modeling the way by delivering a positive and supportive attitude while breaking up around 10 little fights.
  • Act as a positive role model to the chaos tribe, by contributing to the overall vibe.
  • Inspire, motivate, and encourage during developmental meltdowns.
  • Possesses excellent communication skills during ALL cry competitions.
  • Demonstrate proficiency and knowledge in tantrum control
  • An active role in understanding and adhering to new emotions
  • Assist and coordinate all imaginative projects
  • Exhibit awareness when help is needed and comply.

Qualifications:

  • MUST BE a serial detective based on unrealistic data, provided by those of questionable knowledge.
  • SHOULD BE able to Solve problems that did not exist, that will be mind blowing and you MUST show excitement.

Be the Firecracker, not just the spark!

One of the biggest things that we neglect, is betting on ourselves and saying NO . We, strive to be the BEST mom, wife, friend, lady that we think makes us perfect and accepted. That society, trauma, generational curses, has deemed us to mold into. As a mom, to a little girl that has a stern concept of NO. I often wonder if she will always be this bold girl (eventually woman), who stands in her NO proudly. As I watch her fight for her NO, with her siblings, its also very clear that she understands her boundaries with the meaning. She clearly understands that NO is power, and power is respect. This little girl is betting on herself to create the atmosphere( life) that she desires and deserves, on her terms.

Now, as I watch this little girl bicker with her siblings, I’m amazed! She holds, persistence, determination, and standards for herself. That she truly believes in her power and getting what she want and needs. Along the way, as adults we loose our power in the word NO. We cave to YES, to please, and to earn the respect we think we desire. But TODAY let’s change! Let’s, put our big pants on, our sparkly boots and imaginary tiara. Let us all cave into saying No. Let’s say No, for that once little girl who would be so proud of you today, for growing and acknowledging! That little girl who, no matter what believes in her power.

Girl, you got this!

As we do our daily tasks, and take care of our little people and love ones. We must also remember that saying NO to those extra play dates, events, home cooked meals, extra work assignments; is okay. It’s not selfish, it’s self care and respect. Your kids will not hate you, your friends will not neglect you, your important family will be there, and work will still be there. Everyone’s belly is full from that frozen pasta, you stuck into the oven. No; gave you power and respect. Because the best ROI (return on investment) is betting on yourself.

How To Normalize A Not-So Pinning House.

Let’s face it, having a house that is always PIN worthy is exhausting. Pick up the things, put the things away, clean the things, REPEAT, REPEAT! It’s like, you need 20 arms to do it all and still you will need to use your feet. I cleaned my house the other day, from top to bottom. I even wiped down all the walls. AND guess what, it lasted for a total of two hours! One child found the markers, another child came into the house with cleats on, another decided they were a big kid and took the liberty to change their own, Pull-ups, and got (brown pudding 😶) everywhere. At that moment, of everything happening ALL at once, I stopped and laughed. Not, sure if I initially laughed because it was funny or to stop myself from crying, any who; I laughed.

I laughed hard and loud, that everyone stopped and looked at me, like I was loosing it. I was now, the intruder in the house. My oldest asked if I was okay, and started sweeping up his mud chips, the other two started helping each other clean up their messes. All while still making a bigger mess. But, they were getting it done together. , A lot of little steps are better than one big step.” As my oldest finishes his task, he joins in on the fun of cleaning up the stinky mess. But, not before he wanted to make me the center of his joke. Because I just cleaned the house. At the very moment, I looked at him and also started laughing, because lets be real, the sh*t was funny. As a momma, this was a proud moment. Proud because we noticed each other in a time of need and because even though it was a messy clean up, we All did it together.

The Point of this post is to say, let’s All normalize not having a perfect PIN ready house at all times. Lets enjoy these moments that we share between our walls with our little people, and love ones. Because at the end of the day “Don’t cry because its over, smile because it happened”-Dr. Suess

As many of you know, working from home with littles is really stressful. Like, crawling into a corner and cry stressful. But wait, you are a bad a** mom, who keeps little people alive! That fact alone, gives you all the permission to crawl into any d*mn corner you want and cry. Besides, my occasional meltdowns, “I” or should I say “WE” thrive best with a schedule.I don’t beat myself up for not solely sticking to it. …But, I am admittedly saying that I love the structure it gives the kids and the fewer corner cries for me. Now, that you see our schedule, you can see there’s nothing really special about it. But, it works for us! Those simple planned out hours, keeps everyone functioning and together in our chaotic house. The kids love it and I love the fact that I have some type of normalcy throughout the day. So momma, who cares if it’s a couple of bullet points that you knockout or a well planned hour by hour schedule. Just remember, your are doing the d*mn thing and your little people are happy! And if you must go to a corner and cry it out, well d*mn you deserve it! Self care comes in many forms, including releasing tears to decompress and saying “I Got This!”. So now that we covered that, let’s go grab a tea and raise our mugs to Bad A*** Mommas, Everywhere!

Its rewarding yourself for all the amazing things you do, day in to day out! It’s being selfish, it’s saying No, It’s not showing up for anyone, but yourself first! Momma, you deserve time to fill your cup, so that it can pour into others!

As Moms, as Women

we spend so much time making sure everyone in our home and around us, is taken care of. We tend forget about ourselves and our needs. D*mn, we forget about our wants. But I’m here to tell you, its okay to indulge in a little self care and to gain your power back, even if its just for an hour.

To practice self care, we do not have spend $money$ on something fancy, it can be as simple as taking a bath, having two glasses of wine, reading a book alone or taking a class, as long as it’s something for you to recharge. Here’s some of my favorite things I like to do, to practice self care.

As you can see my list is very vague, but those simple things make me happy and allows me to get my power back. It allows this Momma, to recharge, show up and show out as my best self! To all the Mommas and women out there feeling bad for wanting to get your power back, you got this and you deserve to show up for your future SELF.
